January 30th & 31st – Emily Chia – Sargasso, Margate
The first chef in the line-up is Emily Chia, Head Chef of Sargasso, located on Margate’s harbour arm and sister restaurant to East London’s acclaimed Brawn. Originally from Vancouver, Emily honed her craft at restaurants in London and Paris, including St John and Restaurant Le Grand Bain. She will bring her passion for seafood and sustainably to Dinings SW3.
February 20th & 21st – Roberta Hall-McCarron – The Little Chartroom & Eleanore, Edinburgh
Celebrated Scottish chef Roberta Hall-McCarron (AYALA Square Meal female chef of the year and GQ Best Chef of the Year nominee) has two restaurants to her name, The Little Chartroom and Eleanore in Edinburgh, with menus influenced by childhood memories of the sea. Roberta’s cooking is informed by the waters and wilds of the Scottish landscape, guided by what is available from its fishermen and farms, from which she creates dishes showcasing her French-British techniques. March 12th & 13th – Joe Baker – Pêtchi, The Channel Islands
Joe Baker is a self-taught chef from Jersey, the Channel Islands, and Chef Owner of restaurant Pêtchi, which he opened in June 2023 with his wife Charlotte. Pêtchi, which means ‘to try and catch a fish’ in Jersey’s native Jèrriais, celebrates a deep reverence for locality, with a menu of island produce cooked over fire.
April 16th & 17th – Dan Cox – Crocadon, Cornwall
Dan Cox is the Chef Owner of Crocadon in St Mellion, Southeast Cornwall, which opened in 2023 and was awarded a Michelin Green star within three months of opening. His debut restaurant located on an 120-acre organic farm, celebrates the connection between food and agriculture as well as the abundance of seafood sourced from south-west shores.
