Barts’ Secret Garden Palomas: A Taste of Mexico in Chelsea


Barts has transformed once again, this time channelling the spirit of Jalisco with a sun-soaked Agave Garden in collaboration with Don Julio and Casamigos. Tucked away behind the speakeasy’s unmarked door, the terrace has been reimagined as a rustic Mexican hideaway—think terracotta walls, agave plants, and more cacti than you can count.

Limited-Edition Palomas with a Twist

At the heart of the experience are a trio of limited-edition Palomas. Alongside the classic Casamigos serve, The Sins of Agave is a bold take featuring Casamigos Blanco, Bénédictine D.O.M, strawberry shrub, chili-agave syrup, lime, and Franklin & Sons Pink Grapefruit Soda—fruity, spicy, and dangerously easy to drink. Meanwhile, La Flor Fugitiva mixes Don Julio Blanco with Akashi-Tai Yuzushu, hibiscus, cranberry, and lemon, finished with a mist of Casamigos mezcal for a smoky twist on the traditional sundowner.

Perfect for after-work drinks or lazy summer evenings, Barts’ Agave Garden is open now and running throughout the season. Reservations recommended—but secrecy is, as always, encouraged.
